🍋 Best Ever Lemon Posset
A 3-ingredient classic with endless elegance
Looking for a dessert that’s both impossibly easy and wildly impressive? Enter: the lemon posset. This creamy British classic has only three main ingredients but feels like something served at a candlelit bistro. Silky, tangy, and rich—this is your new go-to.
Ingredients (Serves 4)
2 cups (480 ml) heavy cream
3/4 cup (150 g) granulated sugar
1/3 cup (80 ml) fresh lemon juice (about 2–3 lemons)
1 tsp lemon zest
Pinch of sea salt
Instructions
Warm the base:
In a saucepan over medium heat, combine the heavy cream and sugar. Stir constantly until the sugar fully dissolves. Bring to a gentle boil.Simmer gently:
Lower the heat and let it simmer for 3 minutes, stirring occasionally. Keep a close eye—it can boil over quickly!Add the flavor:
Remove from heat. Whisk in the lemon juice, zest, and a pinch of salt. The mixture will slightly thicken as the citrus works its magic.Pour & chill:
Let cool for 5 minutes. Pour into peeled out lemons, ramekins or small glasses. Chill uncovered for at least 4 hours or overnight until just set with a beautiful wobble.
To Elevate It
Add ½ tsp vanilla bean paste or scraped vanilla pod during the cream step – it plays surprisingly well with the lemon.
Garnish with:
Crushed shortbread cookies
Fresh raspberries or blackberries
A few edible flowers or herbs (lemon balm, mint, violas)
